Flour Tortillas2tortillas
Chicken, cooked & cubed1breast
Beans, red kidney1/4uncooked cup
Rice1/4uncooked cup
Tomato1diced
Avocado1diced
Cheddar Cheese, grated2 ounces
Cilantro, fresh chopped2tablespoons
Chipotle Sauce1/2cup

Instructions

Warm flour tortillas separately in foil. Soak beans overnight, or for 6-8 hours, then simmer in ample fresh water for 2 hours to cook. Drain and set aside. May use any beans desired. Cook rice in 1/2 cup water for 20 minutes. See separate recipe for Chipotle Sauce. Stir chicken and beans into cooked rice and warm on stovetop. Assemble burritos with all ingredients. May warm in oven briefly if desired, but be careful not to dry out tortillas! Enjoy!
