Recommend making pork tenderloin and potatoes the night before making fried rice. On the following night, make rice and use remaining pork to make fried rice recipe for two more nights dinner. Beat eggs with salt, set aside. Prepare other ingredients and arrange on big platter so they may be easily used as needed. Heat 1 tablespoon peanut oil in WOK and fry eggs, breaking into small pieces with spatula. Remove eggs to a bowl. Heat 1 tablespoon oil in WOK and stir-fry the peas for 1 minute. Remove to bowl. Repeat for mushrooms. Heat last 2 tablespoons oil in WOK and add rice. Stir-fry until rice is thoroughly heated. Add pork (baked as stated below), green onions and previously stir-fried ingredients. If you like soy-flavored rice, add 2 tablespoons dark soy sauce. Toss to mix well. Serve immediately. May substitute ham & bacon for pork. May try bacon with pork. May use fresh or frozen peas.
